Ingredients

1 pound chicken breasts, boneless and skinless

1 cup breadcrumbs (Panko preferred for extra crunch)

½ cup grated Parmesan cheese

2 teaspoons garlic powder

1 teaspoon paprika

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

2 large eggs

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Start by preheating your air fryer to 400°F (200°C). While it heats, slice the chicken breasts into thin cutlets (about ¼ inch thick) for faster cooking and more surface area for crunch.

Make the Breading Mixture: In a large mixing bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, paprika, oregano, salt, and black pepper. Mix until well incorporated.

Prepare the Egg Wash: In a separate bowl, whisk the eggs and olive oil together until combined. This will help the breadcrumb mixture adhere to the chicken.

Coat the Chicken: Dip each chicken cutlet first into the egg wash, allowing any excess to drip off. Then, press the chicken into the breadcrumb mixture, ensuring each piece is thoroughly coated. For an extra crispy texture, double dip by repeating the egg wash and breadcrumb steps.

Air Fry the Chicken: Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the coated chicken pieces in the basket in a single layer, making sure not to overcrowd them. You may need to cook in batches. Spray the tops of the chicken cutlets lightly with cooking spray.

Cook: Air fry the chicken for 10-12 minutes, flipping halfway through. They are done when the chicken reaches an internal temperature of 165°F (75°C) and is golden brown and crispy.

Serve: Once cooked, remove the chicken from the air fryer and let it rest for a few minutes. Garnish with chopped fresh parsley before serving. Enjoy your crispy chicken with your favorite dipping sauce!
