Ingredients

1 ½ cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsweetened cocoa powder

1 teaspoon baking soda

½ teaspoon salt

1 cup buttermilk, room temperature

½ cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 cup boiling water

1 cup chopped walnuts (optional)

1 cup sweetened shredded coconut (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.

Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until well combined.

Mix Wet Ingredients: In a separate bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract. Stir until smooth.

Combine Wet and Dry: Pour the wet mixture into the dry ingredients. Mix until just combined; do not overmix.

Add Boiling Water: Carefully stir in the boiling water until the batter is smooth. The batter will be thin.

Optional Add-Ins: Fold in the chopped walnuts and shredded coconut if you’re using them.

Bake: Pour the batter into the prepared baking pan and bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Cool: Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Frost (Optional): If desired, you can frost the cooled cake with a classic chocolate frosting or simply dust it with powdered sugar for a lighter touch.

Serve and Enjoy: Slice into squares and serve. This cake is perfect for gatherings, church functions, or simply to enjoy with a cup of coffee!
