1 cup ground pork (or chicken/tofu for a vegetarian option)

1 cup shredded cabbage

1/2 cup grated carrots

2 green onions (sliced)

2 cloves garlic (minced)

1 tablespoon fresh ginger (grated)

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon chili garlic sauce (optional, for heat)

1 tablespoon cornstarch

2 tablespoons cooking oil (for frying)

4 cups chicken or vegetable broth

Sesame seeds (for garnish)

Prepare the Noodles: Begin by cooking the ramen noodles according to package instructions. Drain and set aside, tossing them lightly with a drizzle of sesame oil to prevent sticking.

    Make the Filling: In a large bowl, combine the ground pork, shredded cabbage, grated carrots, sliced green onions, minced garlic, grated ginger, soy sauce, rice vinegar, chili garlic sauce (if using), and cornstarch. Mix well until all ingredients are evenly incorporated.

      Shape the Dumplings: Take a small amount of the filling mixture (about a tablespoon) and place it in the center of a dumpling wrapper. Moisten the edges with a bit of water, fold in half, and press the edges to seal. Repeat this process until all filling is used, placing the finished dumplings on a parchment-lined tray.

        Cook the Potstickers: Heat 1 tablespoon of cooking oil in a large skillet over medium-high heat. Add the potstickers in a single layer, making sure not to overcrowd the pan. Cook for 2-3 minutes until the bottoms are golden brown, then add 1/4 cup of water to the skillet and cover immediately. Steam for about 4-5 minutes until the water has evaporated. Remove the lid and cook for another 1-2 minutes to ensure they’re crispy.

          Prepare the Broth: In a separate pot, heat the chicken or vegetable broth over medium heat. Once warm, add the remaining soy sauce and adjust seasoning as needed.

            Assemble the Bowls: In each serving bowl, place a portion of the cooked ramen noodles. Ladle the warm broth over the noodles and top with the crispy potstickers.
