4 medium-sized Yukon Gold potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded cheddar cheese (optional)

1/4 cup chopped fresh chives (for garnish)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

    Cook Potatoes: Add the diced potatoes, vegetable broth, thyme, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the potatoes are tender.

      Blend the Soup: Once the potatoes are cooked, use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup or mash some of the potatoes with a fork.

        Add Cream and Cheese: Stir in the heavy cream and heat the soup over low heat until warmed through. If using, add shredded cheddar cheese at this stage and stir until melted and well incorporated.
