Ingredients

3 large potatoes, peeled and diced

1 cup grated cheese (aged cheddar or a Hungarian cheese like Trappista)

1/2 cup all-purpose flour

1/2 cup breadcrumbs (preferably Hungarian style)

1 large egg

1 teaspoon garlic powder

1 teaspoon paprika (preferably smoked)

Salt and pepper, to taste

Vegetable oil, for frying

Fresh parsley, for garnish (optional)

Instructions

Cook the Potatoes: Place the diced potatoes in a pot filled with salted water. Boil until fork-tender, about 15 minutes. Drain and let them cool slightly.

Mash the Potatoes: In a large mixing bowl, mash the cooked potatoes until smooth. Be sure there are no lumps.

Add Cheese and Seasoning: Stir in the grated cheese, garlic powder, paprika, salt, and pepper until well combined.

Prepare the Dipping Station: In one bowl, place the flour. In another bowl, beat the egg. In a third bowl, place the breadcrumbs.

Shape the Sticks: Take a small amount of the potato mixture and shape it into sticks (about 3 inches long and 1 inch thick). Repeat until all the mixture is used.

Coat the Sticks: Dredge each stick in flour, dip it in the beaten egg, and then roll it in breadcrumbs to coat thoroughly.

Fry the Sticks: In a large skillet, heat vegetable oil over medium heat. Once hot, add the potato sticks in batches, being careful not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per side.

Drain Excess Oil: Using a slotted spoon, transfer the fried sticks to a paper towel-lined plate to drain excess oil.

Serve: Garnish with fresh parsley if desired and serve hot with your favorite dipping sauce (like sour cream or a spicy dip).
