2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

4 medium potatoes, peeled and diced (about 4 cups)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) white beans, drained and rinsed

6 cups vegetable broth

1 bay leaf

Salt and pepper to taste

2 cups kale or spinach, chopped (optional)

Juice of 1 lemon

Fresh parsley or cilantro for garnish

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until translucent. Stir in the minced garlic, carrots, and celery; cook for an additional 5 minutes until vegetables begin to soften.

    Add Spices: Sprinkle in the ground cumin and smoked paprika, stirring well to coat the vegetables and release their flavors. Cook for another minute until fragrant.

      Incorporate Potatoes and Beans: Add the diced potatoes, kidney beans, white beans, and vegetable broth to the pot. Toss in the bay leaf and season with salt and pepper.
