1 lb pork tenderloin, cut into 1-inch medallions

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup orange juice (freshly squeezed is best)

1 tablespoon honey

2 tablespoons soy sauce

1 teaspoon Dijon mustard

1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)

Fresh parsley, chopped (for garnish)

Zest of 1 orange (for garnish)

Instructions
 

Prepare the Pork: Season the pork medallions with garlic powder, onion powder, smoked paprika, salt, and pepper. Ensure they are evenly coated.

    Sear the Medallions: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork medallions and cook for about 4-5 minutes on each side until they are browned and reach an internal temperature of 145°F. Remove from the skillet and set aside.

      Make the Citrus Glaze: In the same skillet, lower the heat to medium and add orange juice, honey, soy sauce, and Dijon mustard. Stir well and bring to a gentle simmer.

        Thicken the Sauce: Once the glaze begins to bubble, add the cornmeal slurry into the mixture, stirring continuously until the sauce thickens, about 1-2 minutes.

          Combine with Pork: Return the seared pork medallions back into the skillet and coat them well in the citrus glaze. Cook for an additional minute to warm through.

            Serve: Plate the medallions, generously spoon the citrus glaze over the top, and sprinkle with fresh parsley and orange zest for a pop of color and flavor.
