4 bone-in pork chops, about 1.5 inches thick

1 cup buttermilk

2 tablespoons Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

2 tablespoons unsalted butter

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Pork:

    - In a large bowl, whisk together buttermilk, Dijon mustard, garlic powder, onion powder, smoked paprika, dried thyme, salt, and pepper.

      - Add the pork chops to the marinade, making sure they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.

        Prepare to Cook:

          - Remove the pork chops from the marinade and let them sit at room temperature for about 30 minutes before cooking. This ensures even cooking.

              Sear the Pork Chops:
