Poor Man's Husband Casserole

Ingredients
  

1 lb ground beef (or turkey)

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10.5 oz) cream of mushroom soup

1 cup shredded cheddar cheese

1 cup cooked rice (white or brown)

1 tsp chili powder

1 tsp cumin

Salt and pepper to taste

1 cup breadcrumbs (for topping)

2 tbsp olive oil

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent.

      Add the ground beef (or turkey) to the skillet. Cook until browned, breaking it apart with a spatula. Drain excess fat if needed.

        Stir in the kidney beans, corn, cream of mushroom soup, cooked rice, chili powder, cumin, salt, and pepper. Mix until well combined.

          Transfer the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

            Top with shredded cheddar cheese and then sprinkle breadcrumbs evenly over the top for a crunchy finish.

              Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and the breadcrumbs are golden brown.

                Remove from the oven, let it cool for a few minutes, then serve warm and enjoy your delicious Poor Man's Husband Casserole!
