Pioneer Woman Breakfast Casserole

A delightful twist on a classic dish.

Ingredients
  

8 slices of bread, cubed (preferably day-old)

1 pound breakfast sausage, crumbled

1 small onion, diced

1 bell pepper, diced (any color)

8 large eggs

2 cups milk

2 cups shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

    In a skillet over medium heat, sauté the crumbled breakfast sausage until browned, about 5-7 minutes. Add the diced onion and bell pepper, cooking for an additional 3-4 minutes, or until the vegetables are tender. Drain any excess fat.

      In a large mixing bowl, whisk together the eggs, milk, garlic powder, salt, black pepper, and paprika until well combined.

        Layer the cubed bread evenly in the bottom of the greased baking dish. Spoon the sausage and vegetable mixture over the bread cubes, followed by the shredded cheddar cheese.

          Pour the egg mixture evenly over the layered bread, sausage, and cheese, ensuring everything is drenched in the egg mixture.

            Cover the dish with aluminum foil and let it sit for at least 30 minutes (or refrigerate overnight for a more developed flavor).

              Bake in the preheated oven, covered for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the casserole is set and the top is golden brown.

                Once finished, let it cool for a few minutes before garnishing with fresh parsley.

                  Cut into squares and serve warm.
