Ingredients
  

1 lb large shrimp, peeled and deveined

1 cup fresh pineapple chunks (or canned, drained)

1 bell pepper (red or yellow), sliced

1 cup snap peas or snow peas

1 small red onion, thinly sliced

3 cloves garlic, minced

1 inch fresh ginger, grated

1/4 cup teriyaki sauce

2 tbsp soy sauce (low sodium)

2 tbsp olive oil or sesame oil

1 tsp cornstarch

2 tbsp water

Salt and pepper, to taste

Cooked rice or noodles, for serving

Green onions and sesame seeds, for garnish

Instructions
 

Prepare the Sauce: In a small bowl, combine the teriyaki sauce, soy sauce, cornstarch, and water. Mix well until the cornstarch is dissolved and set aside.

    Marinate the Shrimp: In a medium bowl, add the shrimp, half of the sauce mixture, along with a pinch of salt and pepper. Let it marinate for about 15 minutes.

      Heat the Pan: In a large skillet or wok, heat the olive oil or sesame oil over medium-high heat until hot.

        Sauté the Vegetables: Add the sliced red onion and garlic to the pan. Stir-fry for about 1-2 minutes until the onion is slightly translucent.

          Add Shrimp: Toss in the marinated shrimp along with the mango chunks, snap peas, and ginger. Stir-fry for about 3-4 minutes until the shrimp turns pink and is cooked through.

            Thicken the Sauce: Pour the remaining teriyaki sauce into the pan, stirring well to coat all ingredients. Cook for an additional 1-2 minutes until the sauce thickens slightly.

              Final Touches: Remove from heat, taste, and adjust seasoning with salt and pepper if necessary.
