Ingredients

1 cup all-purpose flour

1 cup sweetened condensed milk

1/2 cup unsalted butter, softened

2 large eggs

1 tsp vanilla extract

1 tsp baking powder

1/4 tsp salt

1 cup crushed pineapple, drained

1/4 cup chopped walnuts or pecans (optional)

1/2 cup shredded coconut (optional for garnish)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.

Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and sweetened condensed milk together until they are light and fluffy.

Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract. Mix until well combined.

Combine Dry Ingredients: In another bowl, sift together the flour, baking powder, and salt.

Mix Dry with Wet: Gradually add the dry ingredient mixture to the butter mixture, mixing gently until just combined.

Fold in Pineapple and Nuts: Carefully fold in the crushed pineapple and chopped walnuts or pecans if you’re using them. Be gentle to retain the fluffiness of the batter.

Pour into Pan: Pour the batter into the prepared cake pan and smooth the top with a spatula.

Bake: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean and the top is lightly golden.

Cool: Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

Garnish: If desired, top the cooled cake with shredded coconut for a tropical touch before serving.

Serve: Slice the cake into pieces and enjoy your delicious Tropical Bliss Pineapple Condensed Milk Cake!
