Ingredients
  

12 store-bought pierogi (cheese, potato, or your favorite)

1 cup shredded sharp cheddar cheese

1 cup sour cream

1 large onion, finely chopped

2 tablespoons butter

1 cup vegetable broth or chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon fresh chives, chopped (for garnish)

Salt and pepper to taste

Optional: 1 cup cooked bacon or sausage, crumbled (for a meaty version)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Onions: In a skillet, melt the butter over medium heat. Add the chopped onion and cook until soft and golden, about 5-7 minutes. Season with a pinch of salt and pepper.

      Layer the Ingredients: In a greased 9x13 inch baking dish, spread a layer of pierogi on the bottom. Top with half of the sautéed onions. Sprinkle half of the cheddar cheese over the top, and if using, layer on the crumbled bacon or sausage.

        Add the Sauces: In a mixing bowl, whisk together the sour cream, vegetable broth, garlic powder, onion powder, and additional salt and pepper. Pour half of this mixture over the first layer in the casserole.

          Repeat Layers: Add another layer of pierogi, followed by the remaining sautéed onions, and then the rest of the cheddar cheese. Pour the remaining sour cream mixture over the top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, uncover and bake for an additional 15-20 minutes until bubbly and golden.

              Garnish and Serve: Once out of the oven, let it cool for a few minutes. Sprinkle chopped chives over the top before serving.
