Persian Saffron Ice Cream

Ingredients
  

2 cups heavy cream

1 cup whole milk

1 cup granulated sugar

1/4 teaspoon saffron threads

4 large egg yolks

1 teaspoon vanilla extract

1/2 teaspoon ground cardamom (optional)

1/2 cup pistachios, finely chopped (for garnish)

Instructions
 

In a small saucepan, heat the heavy cream and whole milk over medium heat until it begins to steam (but not boil). Remove from heat and add the saffron threads to the mixture. Let it steep for about 20 minutes to allow the saffron to infuse its flavor and color.

    In a separate bowl, whisk together the egg yolks and granulated sugar until it turns pale and creamy.

      Gradually pour the warm saffron-infused cream mixture into the egg yolk mixture, whisking continuously to temper the eggs and prevent them from scrambling.

        Once combined, pour the mixture back into the saucepan and cook over low heat, stirring constantly with a wooden spoon until it thickens slightly and coats the back of the spoon (about 5-8 minutes). Be careful not to let it boil.

          Remove from heat and stir in the vanilla extract and ground cardamom (if using). Let the custard cool to room temperature, then refrigerate for at least 2 hours or until chilled.

            Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, typically about 20-25 minutes, until it reaches a soft-serve consistency.

              Transfer the ice cream into an airtight container. Freeze for at least 4 hours or until firm.

                When ready to serve, scoop the saffron ice cream into bowls and sprinkle with finely chopped pistachios for garnish.
