Ingredients

1 lb fresh scallops (dry-packed preferred)

2 tbsp unsalted butter

2 tbsp olive oil

2 cloves garlic, minced

Salt and freshly cracked black pepper, to taste

1 tbsp fresh lemon juice

1 tsp fresh parsley, finely chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preparation of Scallops: Pat the scallops dry with paper towels to remove any moisture. This helps achieve a good sear. Season both sides generously with salt and pepper.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until it is shimmering but not smoking.

Searing the Scallops: Carefully add the scallops to the skillet, ensuring they are spaced apart (don’t overcrowd the pan). Sear them without moving for about 2-3 minutes until a golden-brown crust forms.

Flip the Scallops: Using tongs, gently flip each scallop and add the butter and minced garlic to the pan. Allow them to sear on the other side for an additional 2-3 minutes, basting the scallops with the melted butter continuously. Cook until they are opaque and just cooked through.

Finishing Touches: Remove the scallops from the skillet and drizzle with fresh lemon juice. If desired, you can continue to cook the butter and garlic for a minute longer to deepen the flavor.

Plating: Arrange the scallops on a plate, spoon the garlic butter over them, and sprinkle with fresh parsley. Serve immediately with lemon wedges on the side for squeezing.
