Ingredients

2 pounds Yukon Gold potatoes, peeled and cubed

1/2 cup unsalted butter, at room temperature

1 cup heavy cream, warmed

1/2 cup sour cream

1 teaspoon garlic powder

Salt, to taste

Freshly cracked black pepper, to taste

Chives or parsley, for garnish (optional)

Instructions

Boil the Potatoes: Place the cubed potatoes in a large pot and cover them with cold water. Add a generous pinch of salt. Bring the water to a boil over high heat, then reduce the heat to medium and let simmer for about 15-20 minutes, or until the potatoes are fork-tender.

Drain and Dry: Drain the potatoes in a colander and allow them to steam dry for a minute or two to remove excess moisture.

Mash the Potatoes: Return the potatoes to the pot or a large mixing bowl. Use a potato masher, ricer, or hand mixer to mash the potatoes until they are smooth and creamy.

Add the Creamy Ingredients: In a separate bowl, mix the room temperature butter, warmed heavy cream, sour cream, garlic powder, and a good pinch of salt and pepper. Stir until the mixture is well combined and the butter is melted.

Combine Everything: Pour the creamy mixture into the mashed potatoes and gently fold them together until fully incorporated. Be careful not to overmix, as this can make the potatoes gluey. Adjust seasoning with additional salt and pepper if needed.

Serve: Transfer the creamy mashed potatoes to a serving bowl. Garnish with chopped chives or parsley, if desired. Serve warm.
