2 pounds flank steak, sliced into thin strips

1 tablespoon olive oil

1 medium onion, sliced

2 bell peppers (any color), sliced

3 cloves garlic, minced

1 cup beef broth

1 tablespoon soy sauce

1 tablespoon Worcestershire sauce

1 teaspoon ground black pepper

1 teaspoon ground ginger

1 tablespoon cornstarch mixed with 2 tablespoons cold water (for thickening)

Salt to taste

Cooked rice or noodles, for serving

Optional: sliced green onions and sesame seeds for garnish

Prepare the Flank Steak: In a skillet, heat the olive oil over medium-high heat. Add the sliced flank steak and sear for about 2-3 minutes until browned. This will enhance the flavor but is optional if you're short on time.

    Layer Ingredients in Crock Pot: Transfer the seared flank steak to the crock pot. Add the sliced onions, bell peppers, and minced garlic over the meat.

      Mix Liquid Ingredients: In a separate bowl, combine the beef broth, soy sauce, Worcestershire sauce, ground black pepper, and ground ginger. Mix well and then pour evenly over the steak and vegetables in the crock pot.

        Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the meat is tender and the flavors are well combined.

          Thicken the Sauce: About 30 minutes before serving, stir in the cornstarch slurry to thicken the sauce. Mix well and spread the cornstarch evenly throughout the sauce. Allow it to cook for an additional 30 minutes.

            Season and Serve: Taste the pepper steak and adjust the salt if necessary. Serve hot over cooked rice or noodles and garnish with sliced green onions and sesame seeds if desired.
