Ingredients

1 cup all-purpose flour

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup chopped pecans

1/2 cup mini chocolate chips (optional)

1/4 cup corn syrup

1 tablespoon milk

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Make the Cookie Dough: In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.

Add Wet Ingredients: Beat in the egg and vanilla extract until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet mixture, stirring until just combined.

Fold in Pecans and Chips: Gently fold in the chopped pecans and mini chocolate chips (if using) until evenly distributed throughout the dough.

Prepare Topping Mixture: In a small bowl, mix the corn syrup and milk until combined. This will be the topping for your cookies.

Form Cookies: Scoop a tablespoon of dough for each cookie and place them on the prepared baking sheet, spacing them about 2 inches apart.

Add Topping: Using a spoon or your fingers, make an indentation in the center of each cookie and drizzle a small amount of the corn syrup mixture in the center.

Bake: Bake the cookies in the preheated oven for 12-15 minutes, or until they start to turn golden brown around the edges.

Cool: Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
