The first step in making Pecan Pie Balls is preparing the pecans. Start with raw pecans to ensure maximum freshness and flavor. You can choose to toast the pecans lightly in a dry skillet over medium heat for about 5-7 minutes. Toasting enhances their flavor, giving your Pecan Pie Balls a deeper, nuttier taste. Be sure to keep an eye on them to prevent burning.

Ingredients

1 cup pecans, finely chopped

1 cup medjool dates, pitted and chopped

1 cup almond flour

1 tsp vanilla extract

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 cup maple syrup

A pinch of salt

1/4 cup dark chocolate chips (optional, for drizzling)

Instructions

Prepare the Pecans: In a food processor, combine the finely chopped pecans, medjool dates, and almond flour. Pulse until the mixture resembles a sticky dough.

Add Flavorings: Add the vanilla extract, cinnamon, nutmeg, maple syrup, and a pinch of salt to the mixture. Continue to pulse until all ingredients are well combined and form a thick, moldable dough. If the mixture is too dry, add more maple syrup a tablespoon at a time.

Form the Balls: Take small portions of the dough and roll them into bite-sized balls (about 1 inch in diameter). Place the balls on a parchment-lined tray.

Chill: Refrigerate the balls for at least 30 minutes to firm up. This step enhances the flavor and texture.

Optional Chocolate Drizzle: If desired, melt the dark chocolate chips in a microwave-safe bowl at 30-second intervals, stirring until smooth. Drizzle over the chilled pecan balls using a fork or a piping bag for a decorative touch.

Serve: Once set, your Pecan Pie Balls are ready to be enjoyed! Store any leftovers in an airtight container in the fridge for up to a week.
