Ingredients

For the Brownie Layer:

1/2 cup (1 stick) unsalted butter

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

For the Cookie Dough Layer:

1/2 cup (1 stick) unsalted butter, softened

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup semi-sweet chocolate chips

8 mini peanut butter cups, unwrapped

Instructions

Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper for easier removal.

    Make the Brownies:

      - In a saucepan over low heat, melt the butter. Remove from heat and stir in granulated sugar, eggs, and vanilla extract until well combined.

        - In a separate bowl, whisk together the cocoa powder, flour, salt, and baking powder. Gradually add this dry mixture to the wet mixture, stirring until just combined. Pour the brownie batter into the prepared pan and spread evenly. Set aside.

          Prepare the Cookie Dough:

            - In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, and mix until well combined.

              - In a separate bowl, combine flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in the chocolate chips.

                Assemble the Layers:

                  - Drop spoonfuls of cookie dough over the brownie layer, covering it but leaving some space for it to spread. Press the mini peanut butter cups into the cookie dough, pushing them slightly down to make them sink into the cookie layer.

                    Bake:

                      - Bake in the preheated oven for 25-30 minutes, or until the edges are firm and a toothpick inserted into the center comes out with moist crumbs (not wet batter). Avoid overbaking to keep the brownies soft.

                        Cool and Serve:

                          - Allow the brownies to cool in the pan on a wire rack for at least 15 minutes. Then, carefully lift them out using the parchment paper (if used) and let cool completely before cutting into squares.

Enjoy your indulgent Peanut Butter Cup Stuffed Cookie Brownies!
