Ingredients

1 cup unsalted butter, softened

1 cup creamy peanut butter

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup chocolate chips (semi-sweet or milk chocolate)

1 cup mini peanut butter cups, chopped

Instructions

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan or line it with parchment paper for easy removal.

In a large mixing bowl, cream together the softened butter, creamy peanut butter, brown sugar, and granulated sugar until light and fluffy (about 3-4 minutes).

Add in the eggs one at a time, blending well after each addition. Stir in the vanilla extract until fully combined.

In another bowl, whisk together the flour, baking soda, and salt. Slowly add the dry ingredients to the wet ingredients, mixing just until incorporated.

Fold in the chocolate chips and chopped mini peanut butter cups, reserving a few for topping the bars.

Spread the cookie batter evenly into the prepared baking pan, smoothing the top with a spatula. Press the reserved chocolate chips and peanut butter cups gently into the surface.

Bake in the preheated oven for 25-30 minutes or until the edges are lightly golden and a toothpick inserted in the center comes out with a few moist crumbs (but not wet batter).

Remove from the oven and allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Once cooled, cut into squares and serve. Enjoy the gooey deliciousness!
