Ingredients

1 cup rolled oats

1 cup almond milk (or milk of choice)

1 ripe banana, mashed

2 tablespoons peanut butter (smooth or crunchy)

1 tablespoon honey or maple syrup (adjust to taste)

1 tablespoon chia seeds (optional for added texture)

1/2 teaspoon vanilla extract

Pinch of salt

Toppings: sliced banana, chopped peanuts, and a drizzle of peanut butter

Instructions

In a mixing bowl, combine the rolled oats, almond milk, mashed banana, peanut butter, honey or maple syrup, chia seeds (if using), vanilla extract, and a pinch of salt.

Stir well until all ingredients are fully combined and the mixture is creamy.

Divide the mixture evenly into two jars or airtight containers.

Cover the jars with lids or plastic wrap and place them in the refrigerator.

Let the oats soak overnight (or at least for 4 hours) to allow the flavors to meld and the oats to absorb the liquid.

In the morning, give the oats a good stir and top with additional sliced banana, chopped peanuts, and a drizzle of peanut butter for an extra treat.

Enjoy your delicious and nutritious Peanut Butter Banana Overnight Oats cold or at room temperature!
