Peanut Butter Balls

Ingredients
  

1 cup creamy peanut butter

1/2 cup honey or maple syrup

2 cups rolled oats

1/3 cup ground flaxseed

1/2 cup dark chocolate chips (optional)

1/4 cup unsweetened cocoa powder

1 tsp vanilla extract

Pinch of salt

Shredded coconut or crushed nuts for coating (optional)

Instructions
 

In a large mixing bowl, combine the creamy peanut butter and honey (or maple syrup) until smooth and well blended.

    Add the rolled oats, ground flaxseed, unsweetened cocoa powder, vanilla extract, and salt to the mixture. Stir until everything is fully incorporated.

      If desired, fold in dark chocolate chips for an extra touch of sweetness.

        Using your hands, form the mixture into bite-sized balls (about 1 inch in diameter).

          If you’d like to coat the balls, roll them in shredded coconut or crushed nuts until fully covered.

            Place the peanut butter balls on a parchment-lined baking sheet.

              Refrigerate for at least 30 minutes to firm up the balls.

                Once set, transfer them to an airtight container and store in the refrigerator for up to two weeks.
