4 cups fresh peaches (peeled and sliced)

1 cup granulated sugar (divided)

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 cup all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon salt

½ cup milk

½ cup unsalted butter (melted)

1 teaspoon almond extract

Optional: Vanilla ice cream for serving

Instructions
 

Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.

    In a large bowl, combine sliced peaches, ½ cup sugar, lemon juice, vanilla extract, and cinnamon. Toss gently until peaches are evenly coated. Pour the peach mixture into the prepared baking dish.

      In another bowl, whisk together the flour, baking powder, salt, and remaining ½ cup sugar until well combined.

        Fold in the melted butter, milk, and almond extract into the dry ingredients until smooth. The batter will be thick.

          Spoon the batter over the peach mixture, spreading gently but leaving some areas uncovered so the peaches can bubble through.

            Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the cobbler comes out clean.

              Once baked, let it cool slightly before serving. Serve warm with a scoop of vanilla ice cream if desired.
