For the Lasagna Layer:

12 lasagna noodles

1 pound ground beef

4 slices bacon, diced

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (15 oz) crushed tomatoes

1 can (6 oz) tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

For the Garlic White Sauce:

4 tablespoons unsalted butter

4 cloves garlic, minced

1/4 cup all-purpose flour

2 cups whole milk

1 cup grated Parmesan cheese

Salt and pepper, to taste

1 teaspoon Italian seasoning

For Garnish:

Fresh parsley, chopped

Extra slices of cooked bacon, crumbled

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

Cook the Lasagna Noodles: In a large pot of boiling salted water, cook the lasagna noodles according to package instructions. Drain and set aside.

Prepare the Meat Sauce: In a large skillet over medium heat, cook the diced bacon until crispy. Remove and drain on paper towels. In the same skillet, add the ground beef and cook until browned. Drain excess fat.

Add Vegetables and Tomatoes: To the skillet, add the chopped onion and minced garlic, cooking until the onion is translucent. Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Let simmer for about 10 minutes. Stir in the cooked bacon and set aside.

Make the Garlic White Sauce: In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Whisk in the flour and cook for 1-2 minutes to form a roux. Gradually whisk in the milk, continuing to stir until the sauce thickens and is smooth, about 5-7 minutes. Stir in 1 cup of Parmesan cheese, salt, pepper, and Italian seasoning.

Assemble the Lasagna: In a large baking dish, spread a thin layer of the meat sauce on the bottom. Layer 4 lasagna noodles over the sauce. Spread half the remaining meat sauce over the noodles, followed by half of the garlic white sauce, and then sprinkle with 1 cup of mozzarella cheese. Repeat the layers: noodles, meat sauce, white sauce, and mozzarella.

Top Layer: Place the final layer of noodles on top, then spread the remaining garlic sauce and sprinkle with the remaining mozzarella and Parmesan cheese.

Bake the Lasagna: Cover the baking dish with aluminum foil (to prevent sticking, spray foil with cooking spray) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until the top is bubbly and golden.

Cool and Serve: Let the lasagna cool for about 10 minutes before slicing. Garnish with fresh parsley and crumbled bacon, and serve hot!
