1 cup romaine lettuce, chopped

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1 small red onion, finely diced

1 red bell pepper, diced

1/2 cup Kalamata olives, pitted and halved

1 cup cooked chickpeas (canned or boiled)

1/2 cup freshly grated Parmesan cheese

1/4 cup fresh parsley, chopped

1/4 cup extra-virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon Dijon mustard

Salt and pepper, to taste

Prepare the Ingredients: Start by washing all your fresh produce thoroughly. Chop the romaine lettuce, cucumber, cherry tomatoes, red onion, and red bell pepper into small, uniform pieces for a better mix.

    Combine the Base: In a large mixing bowl, combine the chopped romaine, cucumber, cherry tomatoes, red onion, red bell pepper, Kalamata olives, and cooked chickpeas. Toss gently to mix the ingredients.

      Make the Dressing: In a smaller bowl, whisk together the extra-virgin olive oil, red wine vinegar, Dijon mustard, salt, and pepper until well combined and emulsified.
