2 medium zucchinis, sliced into half-moons

8 ounces of button mushrooms, sliced

3 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon fresh thyme (or ½ teaspoon dried thyme)

1 teaspoon balsamic vinegar

Salt and pepper to taste

¼ cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Veggies: Rinse the zucchinis and mushrooms under cold water. Slice the zucchinis into half-moon shapes, making them about ½ inch thick, and slice the mushrooms.

    Heat the Pan: In a large skillet, heat the olive oil over medium heat. Once hot, add the sliced zucchinis and mushrooms.

      Sauté the Vegetables: Cook the vegetables for about 5-7 minutes, stirring occasionally, until they start to soften and brown slightly.

        Add Garlic and Thyme: Stir in the minced garlic and thyme, cooking for an additional 2-3 minutes until fragrant.

          Season: Drizzle the balsamic vinegar over the sautéed veggies. Season with salt and pepper to taste, stirring well to combine.

            Optional Cheese Topping: If desired, sprinkle the grated Parmesan cheese over the top and let it melt for the last minute of cooking.

              Garnish and Serve: Remove from heat and garnish with fresh chopped parsley before serving.
