1 cup rolled oats

1 cup almond milk (or any milk of your choice)

1 tablespoon chia seeds

2 tablespoons honey (or maple syrup for a vegan option)

1/2 teaspoon vanilla extract

1 cup mixed berries (strawberries, blueberries, raspberries, etc.)

1/4 cup Greek yogurt (optional for creaminess)

Pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

In a medium-sized mixing bowl, combine the rolled oats, chia seeds, and a pinch of salt. Stir well to combine.

    In a separate bowl or jar, whisk together the almond milk, honey, and vanilla extract until the honey is fully dissolved.

      Pour the milk mixture over the oat mixture and stir until everything is evenly combined.

        Gently fold in half of the mixed berries, reserving the other half for topping later.

          If using Greek yogurt, layer it into the mixture for added creaminess.

            Transfer the mixture into airtight containers or jars and seal them tightly.

              Place the jars in the refrigerator for at least 6 hours or overnight, allowing the oats to soak up the milk and flavors.

                In the morning, stir the oats and add a splash of milk if you prefer a thinner consistency.

                  Top with the reserved mixed berries, an extra drizzle of honey, and garnish with fresh mint leaves if desired.
