1 loaf of brioche bread, cut into 1-inch cubes

6 large eggs

2 cups whole milk

1 cup heavy cream

1/2 cup granulated sugar

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1 cup maple syrup (plus more for serving)

1/2 cup chopped pecans (optional)

Powdered sugar for dusting (optional)

Fresh berries for serving (optional)

Instructions
 

Prepare the Bread: Begin by placing the cubed brioche bread in a large greased baking dish (approximately 9x13 inches) evenly spread across the bottom.

    Make the Custard Mixture: In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined and smooth.

      Combine: Pour the custard mixture evenly over the cubed brioche bread. Press down gently to ensure all of the bread is soaked.

        Add Maple Syrup: Drizzle the maple syrup over the top. If using, sprinkle the chopped pecans over the casserole.

          Cover & Refrigerate: Cover the dish with plastic wrap and refrigerate overnight, allowing the bread to soak up the custard.

            Preheat & Bake: The next morning, preheat your oven to 350°F (175°C). Remove the casserole from the fridge and let it sit at room temperature for about 15 minutes.

              Bake: Bake the casserole uncovered for 45-50 minutes, or until the top is golden brown and slightly puffed. The center should be set but still tender.

                Serve: Remove from the oven and let cool for a few minutes. Dust with powdered sugar if desired, and serve warm with additional maple syrup and fresh berries on the side.
