Overnight Crockpot Christmas Breakfast Casserole

Ingredients
  

1 loaf of crusty French bread, cut into 1-inch cubes

8 large eggs

2 cups milk (whole or 2%)

1 cup heavy cream

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/2 cup maple syrup

1 cup cooked and crumbled sausage (or diced ham, optional)

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (red and green for a festive touch)

1/2 cup diced onion

Fresh berries and powdered sugar for serving (optional)

Instructions
 

Prepare the Base: In a large mixing bowl, whisk together the eggs, milk, heavy cream, vanilla extract, cinnamon, nutmeg, and maple syrup until fully combined.

    Assemble the Casserole: In your crockpot, layer half of the bread cubes evenly on the bottom. Next, sprinkle half of the cooked sausage (or ham), half of the shredded cheese, and half of the diced vegetables over the bread. Repeat this process with the remaining bread cubes, sausage, cheese, and vegetables.

      Pour the Egg Mixture: Carefully pour the egg mixture over the top of the layered bread and toppings, ensuring that all the bread is soaked. Gently press down with a spatula to ensure an even distribution of the liquid.

        Refrigerate Overnight: Cover the crockpot with the lid and place it in the refrigerator overnight to let the flavors meld and the bread absorb the mixture.

          Cook the Casserole: On Christmas morning, remove the crockpot from the fridge. Turn your crockpot to the low setting and cook for about 6 to 8 hours, or until the casserole is set and lightly golden on top.

            Serve: Once done, serve warm, topped with fresh berries and a dusting of powdered sugar if desired.
