1 loaf of brioche or challah bread, sliced into 1-inch thick pieces

6 large eggs

1 cup heavy cream

1 cup whole milk

3/4 cup granulated sugar

1 tablespoon vanilla extract

1 tablespoon pure maple syrup

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 cup brown sugar (for topping)

Fresh berries (for garnish, optional)

Whipped cream (for serving, optional)

Instructions
 

Prepare the Bread: Arrange the slices of brioche or challah in a greased 9x13 inch baking dish, overlapping them slightly. This will help with even soaking.

    Make the Custard: In a large mixing bowl, whisk together eggs, heavy cream, whole milk, granulated sugar, vanilla extract, maple syrup, cinnamon, and salt until well combined and smooth.

      Soak the Bread: Pour the custard mixture evenly over the arranged bread slices, making sure to coat each piece thoroughly. Gently press down to ensure the bread absorbs the custard.

        Cover and Refrigerate: Cover the dish with plastic wrap and refrigerate overnight (or at least 4 hours) to allow the bread to soak up the custard.

          Preheat the Oven: In the morning, preheat your oven to 350°F (175°C).

            Bake the French Toast: Remove the bread from the refrigerator and uncover. Sprinkle the brown sugar evenly over the top of the soaked bread. Bake in the preheated oven for 30-35 minutes, or until the custard is set and the top is golden brown.

              Caramelize the Sugar: For a true crème brûlée effect, you can use a kitchen torch to caramelize the brown sugar topping until it is bubbly and crispy. Alternatively, broil the French toast for 2-3 minutes until the sugar is caramelized, keeping a close eye to prevent burning.

                Serve: Once done, remove the dish from the oven and let it cool for a few minutes. Cut into squares and serve warm, garnished with fresh berries and a dollop of whipped cream if desired.
