Overnight Breakfast Casserole

1 loaf of crusty bread (such as French or sourdough), cubed

8 large eggs

2 cups whole milk

1 cup shredded cheddar cheese

1 cup cooked and crumbled breakfast sausage (or bacon)

1 small onion, diced

1 bell pepper, diced (any color)

1 cup fresh spinach, chopped

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper, to taste

¼ teaspoon red pepper flakes (optional)

Fresh parsley, for garnish

Prepare the Base: In a large mixing bowl, whisk together the eggs, milk, garlic powder, thyme, salt, pepper, and red pepper flakes until well combined.

    Combine Ingredients: In a large, greased baking dish (9x13 inches works well), layer the cubed bread, followed by the crumbled sausage, diced onion, bell pepper, and chopped spinach. Pour the egg mixture evenly over the top.

      Add Cheese: Sprinkle the shredded cheddar cheese over the casserole evenly.

        Refrigerate: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight to allow the bread to soak up the egg mixture.

          Bake: Preheat your oven to 350°F (175°C). Remove the plastic wrap and bake the casserole for approximately 45-55 minutes, or until the eggs are fully set and the top is golden brown.

            Serve: Allow the casserole to cool for about 5-10 minutes before slicing. Garnish with fresh parsley if desired and serve warm.
