Ingredients

4 bone-in or boneless pork chops (about 1 inch thick)

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving, optional)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

Prepare the Garlic Butter Mixture: In a small bowl, combine the melted butter, minced garlic, dried thyme, dried rosemary, smoked paprika, salt, and black pepper. Mix well until the garlic and herbs are evenly incorporated in the butter.

Season the Pork Chops: Pat the pork chops dry using paper towels. This helps to get a nice sear later. Brush both sides of the pork chops with olive oil and then generously spread the garlic butter mixture over the top of each chop, reserving a tablespoon of the mixture for basting later.

Sear the Pork Chops (Optional): For an extra layer of flavor and a beautiful crust, heat a skillet over medium-high heat. When hot, sear the pork chops for 2-3 minutes on each side until golden brown. This step enhances the flavor but can be skipped if you prefer to bake them directly.

Bake in the Oven: Transfer the seared (or raw) pork chops to a baking dish. Pour any remaining garlic butter mixture over the top. Bake in the preheated oven for 20-25 minutes or until the internal temperature reaches 145°F (63°C). If you'd like, baste the pork chops with the reserved garlic butter halfway through cooking for additional moisture and flavor.

Rest the Pork Chops: Once done, remove the pork chops from the oven and let them rest for 5 minutes. This ensures that the juices redistribute, making each chop juicy and tender.

Serve: Garnish with chopped fresh parsley and serve with lemon wedges on the side for an extra zing. These pork chops pair beautifully with mashed potatoes or a fresh salad.
