1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup water

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup buffalo sauce (store-bought or homemade)

2 tablespoons melted butter (optional for extra richness)

Fresh parsley or green onions, chopped for garnish

Celery sticks and ranch or blue cheese dressing for serving

Instructions
 

Preheat the Oven: Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper for easier cleanup.

    Prepare the Cauliflower: In a large mixing bowl, combine the flour, water, garlic powder, onion powder, smoked paprika, salt, and black pepper. Whisk until you have a smooth batter.

      Coat the Cauliflower: Add the cauliflower florets to the bowl and toss until they are well-coated in the batter. Let them sit for about 10 minutes to absorb the flavors.

        Bake the Cauliflower: Spread the coated cauliflower in a single layer on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes or until the florets are golden brown and crispy, flipping them once halfway through.

          Buffalo Sauce Mixture: While the cauliflower is baking, mix the buffalo sauce with melted butter in a bowl (if using). If you prefer more heat, you can add additional hot sauce to taste.
