1 lb Italian sausage (spicy or mild, according to preference)

1 medium onion, chopped

3 cloves garlic, minced

4 medium potatoes, thinly sliced (Yukon Gold or red)

4 cups chicken broth

1 cup heavy cream

2 cups kale, chopped (stems removed)

1 teaspoon red pepper flakes (adjust for spice)

Salt and pepper to taste

2 tablespoons olive oil

Grated Parmesan cheese for serving (optional)

Instructions
 

Cook the Sausage: In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes. Remove any excess grease if necessary.

    Sauté Vegetables: Add the chopped onion to the pot and cook until translucent, about 3-4 minutes. Stir in minced garlic and red pepper flakes, cooking for an additional minute until fragrant.

      Add Potatoes: Add the thinly sliced potatoes to the pot and stir to combine. Cook for another 2-3 minutes.

        Simmer: Pour in the chicken broth and bring the mixture to a boil. Reduce the heat, cover, and let it simmer for about 15-20 minutes, or until the potatoes are tender.

          Incorporate Kale: Stir in the chopped kale and simmer for an additional 5 minutes until the kale is wilted and tender.

            Cream it Up: Pour in the heavy cream and stir well. Allow the soup to heat through for another 2-3 minutes. Taste and adjust seasoning with salt and pepper as needed.
