12 oz (340g) pasta (penne or fusilli works great)

1 lb (450g) ground beef or turkey

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 packet taco seasoning (or homemade: cumin, chili powder, paprika, garlic powder, and onion powder)

1 can (14 oz) diced tomatoes (with juice)

1 can (15 oz) black beans, drained and rinsed

2 cups chicken or vegetable broth

1 cup corn kernels (fresh or frozen)

1 cup shredded cheddar cheese (plus extra for topping)

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Lime wedges (for serving)

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in minced garlic and cook for another minute until fragrant.

    Brown the Meat: Increase the heat to medium-high and add the ground beef or turkey. Cook until browned and no longer pink, breaking it apart with a wooden spoon (approximately 5-7 minutes). Drain excess fat if necessary.

      Add Seasoning: Sprinkle the taco seasoning over the meat mixture. Stir well to distribute the spices evenly. Cook for an additional minute for the flavors to integrate.

        Combine Ingredients: Pour in the diced tomatoes (with their juices), black beans, corn, and broth. Stir to combine. Bring the mixture to a simmer.

          Cook the Pasta: Add the uncooked pasta to the pot. Stir everything together and ensure the pasta is submerged in the liquid. Cover the pot and reduce heat to a simmer. Cook for 10-12 minutes, stirring occasionally, until the pasta is cooked al dente and the liquid has mostly absorbed.

            Cheesy Finish: Once the pasta is cooked, remove the pot from heat. Stir in the shredded cheddar cheese until melted and creamy. Season with salt and pepper to taste.

              Serve: Garnish with chopped cilantro and extra cheese if desired. Serve hot with lime wedges for a zesty kick.
