Ingredients

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

3 cups beef broth

1 (14.5 oz) can diced tomatoes, with juices

2 cups elbow macaroni, uncooked

1 cup shredded carrots

1 tablespoon Worcestershire sauce

1 tablespoon mustard (yellow or Dijon)

2 cups shredded cheddar cheese (plus more for topping)

Salt and pepper to taste

2 tablespoons olive oil

1/4 cup chopped fresh parsley (for garnish)

Instructions

Sauté the Beef and Aromatics: In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon (about 5-7 minutes). Drain the excess fat, if necessary. Add the diced onion and minced garlic; sauté until the onion is translucent (around 3 minutes).

Add Broth and Tomatoes: Pour in the beef broth and diced tomatoes (with their juices). Stir well to combine.

Incorporate Vegetables and Pasta: Add the uncooked elbow macaroni, shredded carrots, Worcestershire sauce, and mustard to the pot. Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 10-12 minutes, or until the macaroni is tender, stirring occasionally.

Cheesy Goodness: Once the macaroni is cooked through, stir in the shredded cheddar cheese gradually, allowing it to melt into the soup. Season with salt and pepper to taste.

Serve and Garnish: Ladle the soup into bowls, top with additional shredded cheddar cheese and chopped parsley for an extra touch of flavor and freshness.

Enjoy: Serve hot and enjoy your creamy, cheesy, and hearty macaroni cheeseburger soup packed with flavor!
