Ingredients
  

1 cup orzo pasta

1 lb large shrimp, peeled and deveined

4 tbsp unsalted butter

3 cups low-sodium chicken broth

1 medium onion, finely diced

3 cloves garlic, minced

Zest and juice of 1 lemon

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 tsp dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

In a large pot or dutch oven, melt 2 tablespoons of butter over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent.

    Add the minced garlic to the pot and sauté for an additional 1 minute until fragrant.

      Stir in the orzo and cook for 2-3 minutes, stirring frequently to lightly toast the pasta.

        Pour in the chicken broth, lemon zest, and oregano. Stir well to combine and bring the mixture to a boil.

          Reduce the heat to low, cover the pot, and let it simmer for about 10 minutes, stirring occasionally until the orzo is cooked al dente and the liquid has mostly absorbed.

            While the orzo is cooking, season the shrimp with salt and pepper. In a separate skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the shrimp and sauté for 2-3 minutes on each side until they turn pink and opaque. Remove from heat.

              Once the orzo is cooked, gently fold in the sautéed shrimp, lemon juice, halved cherry tomatoes, and fresh spinach. Cook for an additional 2-3 minutes until the spinach wilts and everything is heated through.

                Taste and adjust the seasoning with more salt, pepper, or lemon juice if desired.

                  Serve warm, garnished with fresh parsley and a sprinkle of grated Parmesan cheese.
