12 oz (340g) penne pasta

2 tbsp olive oil

3 cloves garlic, minced

1 medium onion, finely chopped

1 cup cherry tomatoes, halved

1 cup baby spinach

1 cup heavy cream

1 cup vegetable broth

1/2 cup grated Parmesan cheese

1/2 tsp Italian seasoning

1/4 tsp red pepper flakes (optional)

Salt and pepper, to taste

Fresh basil, for garnish

Sauté Aromatics: In a large pot or deep skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing for about 3-4 minutes until they become fragrant and translucent.

    Add Tomatoes and Spinach: Stir in the cherry tomatoes and cook for another 2-3 minutes until they soften slightly. Add the baby spinach and mix until wilted.
