2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

Salt and pepper to taste

4 cloves garlic, minced

1 teaspoon Italian seasoning

1 can (14 oz) diced tomatoes, undrained

4 cups chicken broth

12 ounces fettuccine pasta

1/2 cup heavy cream

3 cups baby spinach

1/2 cup sun-dried tomatoes, chopped

1/2 cup grated Parmesan cheese

Fresh basil for garnish

Sauté the Chicken: In a large pot, heat the olive oil over medium-high heat. Season the diced chicken with salt and pepper, then add it to the pot. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Sauté the Aromatics: In the same pot, add the minced garlic and Italian seasoning. Sauté for about 1 minute until fragrant.

      Add Tomatoes and Broth: Stir in the diced tomatoes with their juices and the chicken broth. Bring the mixture to a boil.

        Cook the Pasta: Once boiling, add the fettuccine to the pot. Reduce the heat and simmer for about 10-12 minutes, or until the pasta is al dente and has absorbed some of the liquid, stirring occasionally.

          Combine Ingredients: Return the cooked chicken to the pot. Stir in the heavy cream, baby spinach, sun-dried tomatoes, and Parmesan cheese. Cook for another 2-3 minutes until the spinach is wilted and the sauce is creamy.

            Serve: Taste and adjust the seasoning with more salt and pepper if needed. Serve the pasta hot, garnished with fresh basil and extra Parmesan cheese if desired.
