1 lb (450g) ground beef

1 cup uncooked long-grain rice

1 medium onion, chopped

2 cloves garlic, minced

1 cup beef broth

1 cup diced tomatoes (canned or fresh)

1 cup frozen mixed vegetables (carrots, peas, corn)

1 tsp dried oregano

1 tsp smoked paprika

Salt and black pepper to taste

1 cup shredded cheddar cheese

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Beef: In a large pot or deep skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent. Next, add the ground beef, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

    Add Rice and Vegetables: Stir in the uncooked rice, diced tomatoes, beef broth, and frozen mixed vegetables. Sprinkle in the dried oregano, smoked paprika, salt, and pepper. Mix well to combine all the ingredients.

      Cook the Casserole: Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a lid and let it simmer for 20-25 minutes, or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

        Cheesy Finish: Once the rice is cooked, remove the pot from the heat. Sprinkle the shredded cheddar cheese on top of the casserole, cover again, and let it sit for 5 minutes to allow the cheese to melt.
