Ingredients
  

1 lb Italian sausage (mild or spicy, sliced)

1 red bell pepper, diced

1 yellow bell pepper, diced

1 medium zucchini, sliced into half-moons

1 large onion, sliced

2 cups cherry tomatoes, halved

3 cloves garlic, minced

1 tsp Italian seasoning

1 tsp paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves, for garnish (optional)

Grated Parmesan cheese, for serving (optional)

Instructions
 

Heat the Olive Oil: In a large skillet over medium heat, add the olive oil. Once hot, add the sliced sausage and cook until browned, about 5-7 minutes, turning occasionally.

    Add Vegetables: To the skillet, add the sliced onion, red and yellow bell peppers, and zucchini. Stir well and cook for about 5 minutes until the vegetables start to soften.

      Flavor it Up: Add the minced garlic, Italian seasoning, paprika, salt, and pepper to the skillet. Stir to combine and cook for an additional 2-3 minutes until the garlic is fragrant.

        Tomatoes Galore: Add the halved cherry tomatoes to the skillet. Stir everything together and let it cook for about 5 more minutes, until the tomatoes soften and release their juices, creating a flavorful sauce.

          Garnish and Serve: Remove from heat and garnish with fresh basil leaves. Serve hot, and if desired, sprinkle grated Parmesan cheese on top for extra flavor.
