1 lb (450g) large shrimp, peeled and deveined

1 cup long-grain white rice (like jasmine or basmati)

2 cups low-sodium chicken broth

4 tablespoons olive oil, divided

4 cloves garlic, minced

1 medium onion, finely chopped

1 red bell pepper, diced

1 cup frozen peas

Zest and juice of 2 lemons

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley or cilantro, for garnish (optional)

Instructions
 

Sauté the Aromatics: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and red bell pepper, sautéing for about 3-4 minutes or until softened. Incorporate the minced garlic and cook for an additional 1-2 minutes, until fragrant.
