4 boneless, skinless chicken thighs

1 tablespoon olive oil

Salt and pepper, to taste

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 teaspoon dried Italian herbs (or a mix of oregano, basil, and thyme)

1 cup fresh spinach, chopped

1 cup cherry tomatoes, halved

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Prepare the Chicken: Season both sides of the chicken thighs with salt and pepper.

    Sauté the Chicken: In a large skillet over medium heat, heat olive oil. Add the chicken thighs and sear for about 5-7 minutes on each side until they're golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Make the Garlic Sauce: In the same skillet, add minced garlic and sauté for 30 seconds until fragrant (be careful not to burn it). Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.

        Add Cream and Herbs: Stir in the heavy cream and dried Italian herbs. Bring the mixture to a slight simmer.

          Combine and Cook: Add the spinach and cherry tomatoes into the sauce, then return the chicken to the skillet. Allow everything to simmer together for about 5 more minutes until the sauce has thickened slightly.

            Finish with Lemon: Squeeze lemon juice over the dish, mixing it in for added brightness and flavor.

              Serve: Garnish with fresh parsley and, if desired, top with grated Parmesan cheese. Serve hot right from the pan for a family-style meal.
