1 tablespoon olive oil

1 pound boneless, skinless chicken breasts, diced

1 medium onion, chopped

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon dried parsley

1/2 teaspoon salt

1/4 teaspoon black pepper

4 cups chicken broth

1 cup heavy cream

1 (16 oz) package potato gnocchi

2 cups fresh spinach

1/2 cup grated Parmesan cheese

Instructions
 

Sauté the Chicken: In a large pot, heat the olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the pot and set aside.

    Cook the Vegetables: In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables are tender.

      Add Seasonings: Stir in the dried thyme, dried parsley, salt, and black pepper, cooking for another minute until fragrant.

        Combine the Broth: Pour in the chicken broth, scraping the bottom of the pot to deglaze. Bring to a boil.

          Add Gnocchi: Once boiling, add the potato gnocchi to the pot. Reduce heat and simmer for about 3-4 minutes, or until the gnocchi start to float.

            Stir in Cream and Chicken: Lower the heat, and add the heavy cream and cooked chicken back to the pot. Stir well and let simmer for another 5 minutes until heated through.

              Add Spinach & Cheese: Mix in the fresh spinach and grated Parmesan cheese, stirring until the spinach wilts and the cheese is melted.

                Serve: Taste for seasoning and adjust if necessary. Serve hot, garnished with extra Parmesan if desired.
