1 whole chicken (about 4 lbs), cut into pieces

8 cups chicken broth

1 large onion, diced

3 cloves garlic, minced

4 medium carrots, sliced

2 stalks celery, sliced

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt (for dumplings)

1 cup whole milk

1/4 cup butter, melted

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Cook Chicken: In a large pot, combine chicken pieces and 8 cups of chicken broth. Bring to a boil, then reduce heat to simmer. Cook for about 1 hour until chicken is cooked through. Remove chicken, let cool slightly, then shred and set aside, reserving broth.

    Sauté Vegetables: In the same pot, add diced onion, garlic, carrots, and celery to the chicken broth. Sprinkle in thyme, rosemary, salt, and pepper. Simmer for about 15 minutes until veggies are tender.

      Make Dumpling Dough: While the vegetables are simmering, in a separate bowl, mix together flour, baking powder, and 1 teaspoon salt. In another bowl, combine milk and melted butter. Gradually stir the wet ingredients into the dry ingredients just until combined.

        Combine Chicken and Broth: Return the shredded chicken to the pot with the broth and vegetables. Stir gently to combine and heat through.

          Add Dumplings: Drop spoonfuls of the dumpling dough onto the surface of the simmering broth. Cover the pot with a lid and let them cook for 15-20 minutes without lifting the lid, until the dumplings are fluffy.
