Old-Fashioned Chocolate Fudge

2 cups granulated sugar

1/2 cup unsweetened cocoa powder

1/4 cup whole milk

1/4 cup unsalted butter

1 tsp vanilla extract

1 cup semi-sweet chocolate chips

1 cup chopped walnuts or pecans (optional)

Pinch of salt

Instructions
 

Prepare an 8-inch square baking pan by lining it with parchment paper, leaving some overhang for easy removal later. Lightly grease the paper with butter or cooking spray.

    In a medium saucepan, combine granulated sugar, cocoa powder, milk, butter, and a pinch of salt. Cook over medium heat, stirring constantly until the mixture reaches a boil.

      Once it reaches a boil, stop stirring and let it boil for about 4-5 minutes. You can use a candy thermometer - you're aiming for the soft-ball stage, which is around 234°F (112°C).

        Remove the saucepan from heat and immediately stir in the chocolate chips and vanilla extract until melted and smooth. If using nuts, fold them in at this stage.

          Pour the fudge mixture into the prepared baking pan and spread it evenly with a spatula. Let it cool at room temperature for a couple of hours until it solidifies.

            Once cooled, lift the fudge out of the pan using the parchment paper overhang, and cut it into square or rectangular pieces. Serve and enjoy your rich, homemade old-fashioned fudge!
