2 lbs beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

4 cups beef broth

3 large carrots, sliced

3 large potatoes, diced

2 stalks celery, sliced

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 bay leaves

1 tablespoon tomato paste

Salt and pepper to taste

1 cup frozen peas (optional)

2 tablespoons Worcestershire sauce

Fresh parsley, chopped (for garnish)

Prepare the Beef: Season the beef cubes with salt and pepper.

    Brown the Meat: In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Add the beef cubes in batches, browning them on all sides. Remove and set aside.

      Sauté Vegetables: In the same pot, add the diced onion and sauté for about 5 minutes until softened. Stir in the garlic and cook for an additional minute.

        Combine Ingredients: Return the browned beef to the pot. Add carrots, potatoes, celery, thyme, rosemary, bay leaves, and tomato paste. Stir to combine.

          Add Broth and Simmer: Pour in the beef broth and Worcester sauce, ensuring all ingredients are covered. Bring to a simmer.

            Cook the Stew: Reduce heat to low, cover, and let it simmer for about 2 to 2.5 hours, or until the beef is tender and the flavors meld together. Stir occasionally.

              Final Touches: If desired, add the frozen peas in the last 10 minutes of cooking. Adjust seasoning with more salt and pepper as necessary.

                Serve: Remove bay leaves before serving. Garnish with fresh parsley and enjoy warm.
