2 cups all-purpose flour

1 teaspoon active dry yeast

1 teaspoon sugar

1 teaspoon salt

1 cup warm water (about 110°F/43°C)

2 tablespoons olive oil (plus extra for greasing)

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped (optional)

Sea salt and freshly cracked black pepper to taste

Instructions
 

Mix the Dry Ingredients: In a large bowl, combine the flour, active dry yeast, sugar, and salt. Whisk them together until well mixed.

    Combine Wet Ingredients: In another bowl, mix the warm water and olive oil. Ensure the water is warm but not too hot to activate the yeast.

      Form the Batter: Pour the wet ingredients into the dry mixture. Stir with a wooden spoon or silicone spatula until a smooth, somewhat sticky batter forms. The dough should be pourable and thicker than pancake batter.

        Let it Rise: Cover the bowl with a kitchen towel or plastic wrap and let it rise in a warm place for about 1-2 hours, or until it has doubled in size and is bubbly.

          Prepare the Garlic Oil: In a small saucepan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Be careful not to burn the garlic. Remove from heat and stir in the chopped parsley.

            Preheat the Pan: Preheat a large non-stick skillet or cast iron pan over medium-high heat. Once hot, drizzle a little olive oil to coat the base.

              Cook the Flatbread: Pour about 1/4 cup of the batter into the hot pan (more or less depending on your desired flatbread size). Quickly spread it into a thin layer if necessary. Cook for about 3-4 minutes or until the edges start to set and bubbles form on the surface.

                Add Garlic Oil: Carefully flip the flatbread using a spatula and drizzle or brush some of the sautéed garlic oil on top. Season with sea salt and freshly cracked black pepper.

                  Finish Cooking: Cook for another 2-3 minutes until both sides are golden brown and slightly crisp. Transfer to a serving plate and repeat the process with the remaining batter.
