For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon vanilla extract

For the filling:

1 cup heavy whipping cream

8 oz cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

1 ½ cups fresh strawberries, hulled and sliced

For the topping:

1 cup fresh strawberries, hulled and sliced

Additional powdered sugar for dusting (optional)

Mint leaves for garnish (optional)

Instructions
 

Prepare the crust: In a medium bowl, mix together the graham cracker crumbs, melted butter, granulated sugar, and 1 teaspoon of vanilla extract until well combined. Press this mixture into the bottom of a lined 8x8 inch baking dish to create an even layer. Use the back of a measuring cup to firmly pack the crust down. Refrigerate while you prepare the filling.

    Make the filling: In a large mixing bowl, beat the heavy whipping cream on high speed until stiff peaks form. In another bowl, mix the softened cream cheese, powdered sugar, and 1 teaspoon vanilla extract until smooth and creamy. Gently fold in the whipped cream with a spatula until no white streaks remain and the mixture is light and airy.

      Layer the filling: Pour half of the creamy mixture over the chilled crust and spread it evenly. Layer half of the sliced strawberries over the filling. Add the remaining cream mixture on top and spread it out evenly once more. Finish with the remaining sliced strawberries arranged on top.

        Chill: Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or until the filling is set and firm.

          Serve: Once chilled and set, remove the bars from the pan by lifting up the edges of the parchment paper. Slice into squares and serve with a dusting of powdered sugar and mint leaves if desired.
